Askinosie

Bittersweet is happy to introduce Askinosie Chocolate at our stores, as well as our online shop. This new artisanal producer focuses strictly on direct relationships with individual farmers, and is producing two very unique bars at the moment, one from San Jose del Tambo in Ecuador, and one from the Soconusco region of southern Mexico. The latter is especially exciting, as Soconusco was literally the heartland of cacao production up until the period of European contact. Sadly, since then the tradition of cacao growing in the area has slowly faded, so it's wonderful to see this new collaboration between local growers and a US chocolate manufacturer! Enjoy...

Terminology

Cacao? Cocoa? Cocoa mass? Cocoa liquor? Cocoa butter?
At least a couple of these are explored today on Chocolate in Context. Full disclosure: Bittersweet contributed :-) Be sure to let us know if these kind of terminological surveys are helpful!
